Cadillac stands in an old fortified place founded in 1280 by Jean de Grailly and where you can still see the Castle of the dukes of Epernon, built between 1600 and 1650
This recent AOC, created in 1973, is part of the Premières Côtes de Bordeaux area and with the same terroir : clay and chalk soil or sand with thick gravel, and a subsoil of clay and limestone or just chalk.
Cadillac wines have qualities similar to those of Sainte-Croix-du-Mont; they are subtle wines, elegant, fruity and aromatic.

Perfect accompaniments
Like other liquoreux wines, Cadillac wine suits foie gras. It partners poultry, « sweet and salted » dishes, and is a good match for a few sauce preparations.
